William Howell

Executive Chef

After graduating from the New England Culinary School Institute, William moved west, where he spent 12 years at celebrated restaurants in the Vail area. Through his work in restaurants as well as independent and private catering, William has been a leading influencer on Colorado’s culinary scene, in particular its move toward more locally grown, sustainable produce. He designs every aspect of Collective Retreats’ culinary offerings, taking inspiration from local ingredients and culture. He’s also a pro angler and is known for sharing his secrets with guests—from tying the ‘right’ flies to choosing the best rock to stand on—at each of our retreats.

Walking the gardens we partner with for inspiration—Three Hearts Farm at Yellowstone, LaVenture Farms in Vail, Liberty Farms in Hudson Valley, and Montesino Ranch in Hill Country.
A close second: the small tributary streams near each retreat, with light tackle, often overlooked fly fishing water. Don’t be surprised to find Chef William in Three Peaks Lodge tying flies for tomorrow’s adventure.
