After graduating from the New England Culinary School Institute, William moved west, where he spent 12 years at celebrated restaurants in the Vail area. Through his work in restaurants as well as independent and private catering, William has been a leading influencer on Colorado’s culinary scene, in particular its move toward more locally grown, sustainable produce. He designs every aspect of Collective Retreats’ culinary offerings, taking inspiration from local ingredients and culture. He’s also a pro angler and is known for sharing his secrets with guests—from tying the ‘right’ flies to choosing the best rock to stand on—at each of our retreats.

Meeting new people, and the shared realization that we live in a global community. I enjoy sparking conversations with locals to learn about the area, what things to do, and which waters to fish.
